Do I really need to use a skeleton housing for the camera with the Alti-Force Sensor Pack?

Altitude is determined by measuring changes in air pressure, so a waterproof (air-tight) case would not allow for accurate sensing of altitude changes.  The skeleton case is the easiest solution, but alternate options are available.

A modification is available to replace a button in a waterproof backdoor with a water-resistant air vent (see procedure here).  Also available is the ready-modified vented accessory backdoor product.
